'Kuah Asam' Recipe (EL SuBa Resto)


Sour sauce from NTT is very similar to fish soup in various regions in Indonesia. However, as the name implies, sour sauce fish more dominated sour taste that refreshing as well as savory fish that tempt. So sour sauce fish is a fusion of fresh sour taste and tasty fish evocative taste. Let's try Kuah Asam recipe directly from the General Manager of Pondok Wisata Pantai Cemara.


Kuah Asam / Sour Soup Recipe (EL-SuBa Resto)


*1 tail of fish, cut into pieces

*5 shallots

*5 garlics

*1/4 fresh turmeric, slice

*1/5 tomato, dice

*1 spring onion, slice

*1/2 chilli chopped

*2 lime leaf

*1 stalks of lemongrass

*100 ml tamarind sauce

*1/2 tsp salt

*1/2 tsp papper

*1 tsp sugar


Method:

1. Cut and wash the fish than squeeze with 1 part of lime, set aside.


2. Boiled a water in a big sauce pan, then wait until it bubbles.


3. Prepared all the herbs than pour it into the boiled water. Cooked for about 3 minutes or until the fragrance smelling out.


4. Take the fish and put it into the boiling water. Add seassoning, salt, papper, sugar and tamarind sauce. Cooked for about 7 minute or until the fish cooked well.


5. Tranfer to a clean serving bowltopped with dice tomato, spring onion and chopped chili. Served hot with a bowl of rice..
